Straightforward and dependable. A solid crema, a firm body, and a clean finish without the brightness of the Arabica-led blends above it. This is coffee built to taste the same on Monday morning as it does on Saturday afternoon, which on a busy bar is worth more than complexity.
Where it fits
Every café has a bean that does the work. Not the one on the specials board, the one that goes into most of the cups. That's what Speciale is for. It takes milk well, holds up in a large latte, and does not fall apart if the grind drifts through service.
Recommended recipe
18g in, 36 to 40g out, 27 to 30 seconds. Adjust to your grinder and your water. One of the more forgiving blends in the range to dial in, and it stays drinkable across a wider extraction window than the pure Arabica does. Rest three to five days off the roast date.
The volume saving
5kg works out at ₹892 a kilo against ₹1,050 on the 1kg, a saving of ₹788 across the box. At an 18g dose that is roughly 275 double shots, or about ₹16 each. On a bar pulling two hundred cups a day, that difference is around ₹1,800 a week against buying by the kilo.
Storing 5kg properly
Buying volume only pays if the last kilo tastes like the first. Keep the bag sealed and away from heat, light and the espresso machine itself, and decant into your hopper as you go rather than filling it. Most cafés work through 5kg in two to three weeks, comfortably inside the window. If it will take you longer than a month, the 1kg is the better buy even at the higher rate.
Who it's for
Cafés, canteens, offices and hotel service running enough volume to move 5kg in under a month. Also the sensible house bean if you are keeping a specialty single origin on a second grinder and need something reliable underneath it.
