A washed Arabica shows its origin more plainly than any blend, and this one is clean and bright with a defined sweetness and a long finish. No Robusta behind it, no chicory softening it. It holds its structure through milk rather than disappearing into a large latte.
Why AA matters on a busy bar
AA is a screen size grade, meaning the largest and most uniform beans in the lot. Uniform beans roast evenly, and evenly roasted coffee is far easier to dial in and far more forgiving when three people are working the machine on a Saturday. That consistency is most of what you are paying for.
Recommended recipe
18g in, 36 to 40g out, 27 to 30 seconds. Adjust to your grinder and your water. Rest the beans three to five days off the roast date before dialling in, and expect to re-dial slightly across the first two weeks as it settles.
The cost question
At an 18g dose a kilo gives roughly 55 double shots, which works out at about ₹33 a shot. Compared against our entry tier at around ₹15 a shot, the gap on a single cappuccino is smaller than most menus round to. Where it shows is on your black coffee, your filter bar, and the customers who notice.
