In the cup
Thick, heavy crema and a strong dark base. Low acidity, firm bitterness, and enough weight to carry through milk and sugar without disappearing. This is not a delicate coffee and it is not trying to be. It is built to taste strong in a cup that gets sugar and hot milk, which is how most coffee in India is actually drunk.
Why Robusta gives more crema
Robusta carries more soluble solids and more caffeine than Arabica, which is what produces that thick, lasting crema on the shot. It is the reason Robusta appears in nearly every traditional Italian espresso blend, and the reason a pure Arabica shot often looks thin next to it.
Recommended recipe
18g in, 36 to 40g out, 27 to 30 seconds. Adjust to your grinder and your water. The most forgiving bean in the range to dial in and the least likely to go sour if extraction runs short, which matters when your team is still learning the machine. Rest three to five days off the roast date.
Cost per shot
At an 18g dose a kilo gives roughly 55 double shots, about ₹15 each. That is under half what Insignia costs per shot. At two hundred cups a day the gap against the top of the range is close to ₹3,600 a week, which is the difference between a coffee line that works and one that does not.
Who it's for
High volume bars, canteens, offices, catering and anywhere the coffee goes into a milk drink with sugar. Also the right first bean for a new café finding its feet, since it is cheap enough to waste while your team learns and forgiving enough that most shots come out drinkable.
