Every roastery has one coffee it puts forward when someone asks what it can really do. This is ours. It sits above Insignia in the range, which means it sits above a washed Arabica AA, and that is not a position we give a coffee lightly.

How to brew it
Espresso at 18g in, 36 to 40g out, 27 to 30 seconds. But this is a coffee worth brewing without milk at least once. A pour over or an Aeropress will show you considerably more of it than a cappuccino will. Rest three to five days off the roast date before dialling in.
The volume saving
5kg works out at ₹2,040 a kilo against ₹2,400 on the 1kg, a saving of ₹1,800 across the box, the largest saving of any product in our range. At an 18g dose that is roughly 275 double shots, or about ₹37 each.
Before you buy 5kg of this one
Think carefully about whether you will move it. A specialty coffee loses its aromatics faster than a Robusta-led blend does, and the qualities you are paying for here are precisely the ones that fade first. If this is going on a guest slot or a filter bar rather than into your main hopper, the 1kg is almost certainly the better buy even at the higher rate. Keep the bag sealed, away from heat and light, and decant as you go.

What's in it
100 percent Arabica, specialty grade. Roasted to order in small batches at our Kinfra factory in Chundale, Wayanad. Net weight 5kg. Every pack carries the batch number, roast date and best before, plus a QR code linking back to the lot. Also available in 200g and 1kg.
